Dark Rum Mojito Cocktail
This darker version of the classic mojito gets it rich color from dark rum. The Demerara sugar combined with the dark rum give this cocktail a taste of molasses, spice and honey and the lime juice and and fresh mint provide balance.
Recipe Ingredients:
10 fresh mint leaves, plus sprigs for garnish
2 teaspoons raw, Demerara, or light brown sugar
2 ounces dark or spiced rum
1/2 ounce freshly squeezed lime juice
1 cup of ice
Club soda or sparkling water
Recipe Directions:
In a cocktail shaker, add mint leaves and sugar, muddle until mint leaves are bruised and fragrant. Add rum, lime juice and a cup of ice. Top shaker and shake vigorously until the shaker is cold to the touch.
Fill a cocktail glass with ice. Pour Mojito through a fine-mesh strainer set over the glass and top cocktail off with club soda. Garnish with mint sprigs and enjoy!
